APRICOT GLAZED PORK KABOBS

1 POUND BONELESS PORK LOIN, CUT INTO 1 INCH CUBES

1 (10 OUNCE) JAR APRICOT PRESERVES

4 TABLESPOONS ORANGE JUICE

4 TABLESPOONS BUTTER

STIR TOGETHER APRICOT PRESERVES, ORANGE JUICE, AND BUTTER IN A SMALL SAUCEPAN, SIMMERING UNTIL BUTTER IS MELTED. PLACE PORK CUBES IN HEAVY ZIP TOP PLASTIC BAG AND POUR 3/4 CUP OF THE APRICOT MIXTURE OVER TO COAT. MARINATE AT LEAST 30 MIN.

THREAD PORK ONTO 4-6 SKEWERS. GRILL OVER HOT COALS 10-12 MINUTES, TURNING ONCE. BASTE OFTEN USING SOME OF THE REMAINING APRICOT MARINADE. WARM ANY REMAINING APRICOT SAUCE AND SERVE ALONGSIDE KABOBS.
