FROM STIRRING UP MEMORIES COOK BOOK FROM HERITAGE HOSPICE

CRANBERRY CHICKEN AND RICE

1 (6 OUNCE) PACKAGE WILD AND LONG-GRAIN RICE

1 (16 OUNCE) CAN WHOLE BERRY CRANBERRY SAUCE

1 TABLESPOON MARGARINE

1 TABLESPOON LEMON JUICE, FRESHLY SQUEEZED

1 TABLESPOON WORCESTERSHIRE SAUCE

1 TABLESPOON SOY SAUCE

8 BONELESS, SKINLESS CHICKEN BREAST HALVES

PREHEAT OVEN TO 350 DEGREES. PREPARE RICE MIX ACCORDING TO PACKAGE DIRECTIONS. IN A SAUCEPAN, COMBINE CRANBERRY SAUCE, MARGARINE, LEMON JUICE, WORCESTERSHIRE SAUCE, AND SOY SAUCE, STIRRING WELL. BRING CRANBERRY MIXTURE TO BOILING OVER MEDIUM HEAT. PLACE COOKED RICE IN A GREASED 9 X 13 INCH BAKING DISH. ARRANGE CHICKEN PIECES OVER RICE AND POUR SAUCE OVER CHICKEN. BAKE AT 350 DEGREES FOR 60 MINUTES.
